Why We Built This
When Elise started working the cheese counter in Melbourne, she needed a reference that was honest and practical. What she found instead was scattered blog posts, overly academic PDO documents, and food writing that talked down to the reader.
KnowTheCheese is the resource she wished existed. Every profile is built from direct tasting experience, cross-referenced against producer data and published dairy science. We cover the cheeses people actually buy and eat, not just the ones that photograph well.
We also answer the questions that come up at the counter every day. What can I substitute for Gruyère? Which soft cheeses are safe during pregnancy? How long does opened Brie actually keep? Those are the questions we answer first, because they are the ones that matter.

How We Write
Every cheese profile follows a consistent structure: origin, flavor, texture, best uses, storage, pairings, and substitutes. We cross-reference each profile against at least two published sources: PDO documents, dairy board publications, or peer-reviewed food science literature.
Comparisons are based on side-by-side tasting where possible. When we haven't tasted something ourselves, we say so and rely on published nutritional data and producer specifications instead.
We update articles when new information surfaces or when readers flag errors. Last-updated dates appear on every article. We don't accept payment for featured placement, and affiliate links are clearly disclosed whenever they appear.
Our Standards
