What Is Batzos?
Greece has a long list of brined cheeses and feta takes almost all the attention, so a second one with its own protected name tends to go unnoticed outside the country.
Batzos has held PDO status since 1996 and belongs to Western Macedonia, in the north of the country.
It is made from sheep's milk or goat's milk, or a blend of the two, and it is stored in brine rather than given a rind.
The finished cheese is white, dry, firm and noticeably full of small holes.
Those holes are worth understanding, because they are not the round gas eyes of an alpine cheese. They are mechanical: gaps left where irregular curd pieces were pressed together without knitting into a solid mass.
Western Macedonia is upland country running to the Albanian and North Macedonian borders, and it is sheep and goat land rather than cow land. The milk in this cheese is the milk that region actually has, which is how most Greek cheese came to be what it is.
PDO status fixes that relationship in law. It means a cheese sold as Batzos has to come from those flocks in that place, which is the whole function of a protected name.
Why Is the Fat Driven Into the Whey?

Almost every decision in a cheese dairy is aimed at keeping fat in the curd, because fat carries flavour and it is what the customer is paying for by weight. Batzos is made the other way round, and the step is deliberate rather than a compromise.
The raw milk is coagulated at a warm temperature and then stirred vigorously, which is the opposite of the gentle handling most curd gets.
That agitation breaks fat out of the forming curd and sends it into the whey. When the mass begins to gel it is stirred again, moving still more of the fat across.
Only then is it cut, salted and put into brine.
What is left is a curd made mostly of protein, which behaves very differently in the mouth and, more importantly, in a pan.
Whether this began as thrift or as design is not something the sources settle. Milk fat has always been worth money separately, and a cheese that gives it up is a cheese that lets a farm sell it twice.
What the step costs is easy to state and easy to underestimate. Fat carries most of what people call richness, so a lean cheese has to earn its flavour from salt, from the animal and from age instead.
That is why Batzos is salty and piquant rather than round and buttery. The seasoning is doing work the fat would normally do.
It also explains the dryness. Fat holds moisture in a paste, and a curd that has given up most of its fat gives up water more readily too, which is why the block feels chalky rather than supple.
The trade is genuinely a trade rather than a loss. A rich cheese is pleasant to eat cold and useless in a hot pan; this one gives up the first to be good at the second.

How Does It Behave in a Pan?

Everything in the section above exists to produce one behaviour, and this is it: put a slab of Batzos in a hot pan and it browns without going anywhere.
A cheese melts when its fat softens and its protein structure gives way. Take most of the fat out and there is far less to soften, so the block browns before it collapses.
That makes it the saganaki cheese in its own region: a slab goes into a shallow pan, crusts on both sides, and arrives at the table still square.
It is also grilled, grated over pasta, put through salads, and fried with eggs.
The regional drink alongside it is ouzo or tsipouro, which is a sensible pairing for something this salty. Both are high in alcohol and low in sugar, and they cut salt rather than compounding it.
Two practical points follow from the physics. Use a hot pan and a short time, because the goal is a crust rather than a slow softening, and a low heat will dry the block out before it colours.
And use very little fat in the pan. There is almost none in the cheese, so anything you add stays on the outside and will fry rather than absorb.
The cheese will squeak against the teeth, which is normal for a lean protein-heavy paste and is the same effect people notice in fresh curds.

Dry the surface properly before it hits the pan. A wet slab steams instead of browning, and this is the step most people skip after soaking the salt out.
How Do You Cut the Salt?

A cheese that lives in salt water until the moment you buy it arrives seasoned whether you wanted it seasoned or not, and for most dishes that is more salt than the recipe has allowed for.
Soak the piece in cold water for fifteen to thirty minutes before cooking, then pat it dry. Salt moves out into the water and the cheese stays firm.
Do this before frying rather than after. A wet surface will steam instead of browning, so drying it properly is the step people skip.
The soak works by simple diffusion: salt moves from the cheese, where it is concentrated, into the water, where it is not. Changing the water once partway through moves more of it than soaking longer in the same bowl.
There is a limit worth knowing. Soaking pulls salt from the outside far faster than the centre, so a thick block will still be salty inside, and the fix is to cut it to serving thickness first.
Nothing about this is Greek. Any cheese sold out of brine arrives over-seasoned, and the Levantine one is soaked in exactly the same way for exactly the same reason.
How Is It Different From Feta?

This is the comparison almost everyone arrives with, because feta is the only Greek brined cheese most people outside Greece have met. The two share a country, a brine bucket and a general whiteness, and almost nothing else.
Feta is soft, crumbly and comparatively rich, and it falls apart under heat, which is why it goes into salads and bakes rather than into a frying pan.
Batzos is dry, firm and lean, holds its edges in a pan, and is full of small holes that feta does not have.
On the tongue Batzos runs piquant and spicy where the better-known one runs lactic and tangy.
If a recipe wants crumbled white cheese through a salad, feta is right. If it wants a slab that survives a pan, this is the one.

What Can You Use Instead?
Substituting by nationality will send you wrong here, because the thing that matters about this cheese is a physical property rather than a place. Sort the shelf by what survives heat instead, and the shortlist comes from four different countries.
The Cypriot frying cheese is the closest in behaviour, since it also holds its shape and takes a hard sear, though it is springier and less brittle.
The Indian non-melting cheese does the same structural job and holds a sear, but it carries no salt at all, so it covers the texture and none of the seasoning.
The Mexican fresh white cheese softens without flowing, which is enough for a baked dish and not enough for a hard sear in a dry pan.
Greece does have a frying cheese of its own, and it is the hard sheep cheese for saganaki, though it is harder and drier and gets grated at least as often as it gets fried.
A firm salted sheep cheese will approximate the flavour but will usually be fattier and will slump sooner.
Feta is the wrong swap for anything cooked, whatever the recipe says. It is the right colour and the wrong physics.
