Almnäs Tegel is a Swedish hard cheese from Almnäs Bruk, made in a large square form with a reddish rind. The maker gives an aging range of 16–22 months, producing a firm cheese suited to thin slices and shavings.
Tegel means brick, but the piece on a cheese board is usually a cut from a much larger cheese.

Why Is Almnäs Tegel Shaped Like a Brick?
The estate's brickmaking history reaches back to the 1750s, and the cheese carries a footprint motif inspired by marks on the old bricks. Its square form preserves that connection without being the size of a building brick.

Almnäs Bruk describes the whole cheese as about 52 × 45 cm and 20–23 kg. A retailer's small rectangular piece or quarter is a sales portion, so its weight should not be mistaken for the dairy's whole format.
At a counter, the name Almnäs Tegel and producer identification are stronger evidence than a reddish rectangular rind alone. A cut from the centre may not carry the decorative mark at all.
What Does Almnäs Tegel Taste Like?
The maker describes a slightly granular, fruity paste, with butter and caramel-like aromas alongside orange and pineapple notes. These are descriptions of flavour, not fruit ingredients or tasting results from our own kitchen.
Its interior can range from ivory to pale straw and may contain occasional small openings or cracks. The reddish surface develops through saltwater care with Brevibacterium linens, while the pressed interior remains firm.

That combination suits small, thin pieces: you get the rind-side aroma without having to chew through a thick block. A granular cut face can break into uneven shavings, so perfectly identical slices are not necessary for serving.
Is Almnäs Tegel Made With Raw Milk?
Trade descriptions do not agree completely. Grönsakshallen identifies its Almnäs Tegel as an organic raw-cow's-milk cheese, while Hugo Ericson's listing calls the milk raw in its description but thermised in its product details.
Confirm the supplied batch's milk treatment when that distinction matters to you. The disagreement cannot be resolved by calling either listing pasteurized, and thermised is not another word for pasteurized.
The maker also describes scalding the curds above 50 C. Heating curds during cheesemaking is a different step from pasteurizing the milk before cheesemaking, so that temperature does not settle the label question.
How Should You Serve Almnäs Tegel?
Thin slices with rye crispbread make a simple starting plate; apple alongside adds moisture and crunch against the hard cheese. Keep the fruit separate from the remaining wedge so its juice does not wet the cut surface during storage.
For a salad, shaving a small amount over cooked potatoes gives uneven pieces that remain easy to pick up with the fork. This uses the cheese's firm texture without requiring it to melt into a sauce.
A small grated addition can also finish a hot potato dish, but a fondue recipe developed for Gruyère is not automatically a tested recipe for Tegel. Try the cheese as a topping before committing a large, expensive portion to a sauce.
For a replacement on a board, aged Gruyère provides another firm cow's-milk cheese, though it does not reproduce Tegel's rind or fruity character. Choose the replacement for slicing or shaving rather than trying to match the square shape.
How Do You Buy and Store Almnäs Tegel?
A cut portion is more practical for home use than the dairy's large block. Its price should be compared by weight, since a quarter-cheese listing and a small counter cut represent very different purchases.
Ask for a piece sized for your planned meals and keep the seller's product identification with it. That retains the milk information and the date after the original rind markings have been divided among several cuts.
Cover the exposed faces, refrigerate at 4 C / 40 F or below, and follow the supplied after-opening instructions. Sixteen months in a maturation room does not establish how many weeks a newly cut wedge will keep at home.
For perishable food left out, the FDA household limit is two hours, or one hour above 32 C / 90 F. Neither the rind's normal aroma nor a good-looking cut face can clear a cheese that has been stored unsafely.
Is Almnäs Tegel Safe During Pregnancy?
UK NHS guidance allows hard cheeses made with pasteurized or unpasteurized milk. US CDC guidance instead identifies pasteurized hard cheese as the safer pregnancy choice, so an unresolved raw-versus-thermised listing does not establish that option.
Rennet type, a lactose claim and a nutrition panel each need their own confirmation on the current product. The cheese's long age and organic label do not answer all three, and it remains a milk product.
