Allgauer Emmentaler is the German protected version of the cheese most people call Swiss, and it is a different product from the Emmental sold in supermarket slices.
It is made from raw hay milk in wheels of at least 60 kilos, and the protected rules say so in writing.
Those rules are worth reading, because almost everything that makes this cheese recognisable is a consequence of one of them.

What Is Allgauer Emmentaler?
The Allgau is the alpine foothill country running along the German side of the border, and it has been dairy country for long enough that the local breed, the fodder rules and the cheese are all named after it. Allgauer Emmentaler is its large hard cheese.
The milk is raw and untreated, delivered the day it is drawn, and set with natural rennet.
Wheels are rind-ripened and round at a minimum of 60kg, or square blocks at a minimum of 40kg.
Fat sits at 45 to 49 percent in dry matter, with a minimum of 62 percent dry matter overall, which puts it in the full-fat grade.
The holes are specified rather than hoped for: mostly 1 to 3cm, round, regularly distributed, and anywhere from sparse to abundant.
Where Does the Protection Actually Apply?
Protected names usually describe a region loosely enough that the boundary is a matter of argument, and this one does not. The PDO names administrative districts, which is unusually specific for a cheese this well known.
It covers Lindau, Oberallgau, Ostallgau, Unterallgau, Ravensburg and Bodenseekreis, plus the towns of Kaufbeuren, Memmingen and Kempten.
A cheese made to the same recipe a district over cannot use the name, which is the whole function of the designation.
This matters at the counter because plain German Emmental is a common industrial product, and it shares neither the milk rules nor the ageing rules.
Inside Germany the protected cheese is not a specialist purchase. It sits in almost every supermarket chiller, cut or sliced, alongside the unprotected version it is easily mistaken for.
What Is Hay Milk, and Why Does It Matter Here?

Hay milk is a defined fodder regime rather than a marketing phrase, and it is the rule that makes the rest of this cheese possible. It means cows fed on grass and dried hay with no fermented silage at any point in the year.
Silage carries bacteria that cause late blowing in a long-aged cheese, splitting the paste and ruining the wheel, so a cheese held for months has a practical reason to refuse it.
The fodder also carries flavour. Alpine meadow hay is herb-rich, and the spicy edge people notice in this cheese is usually credited to it.
There is a third effect, and it turns out to be the interesting one. Hay in the barn means hay dust in the milk.
How Do the Holes Actually Form?

The holes are not cut, pressed or injected, which is the first thing to get straight, because the alternative explanations people arrive with are all mechanical. They are made by propionic bacteria eating the lactic acid in the young cheese and giving off carbon dioxide as they work.
That gas has nowhere to go, so it collects into pockets and pushes the paste apart around them.
The PDO forces the conditions that let this happen. Of the three month minimum, at least four weeks must be spent at 20°C or above in a warm fermentation cellar.
That is why the wheels bulge. Under that much internal pressure a wheel domes at the sides, and a flat-sided Emmentaler has usually not been through a proper warm room.
Why Did Emmental's Holes Get Smaller Everywhere?
The gas needs somewhere to start, and for most of the cheese's history that was a speck of hay.
Swiss research published in 2015 identified the trigger: microscopic hay particles falling into the bucket during hand milking gave the carbon dioxide a nucleus to gather around.
Closed automatic milking removed them. The milk got cleaner, and the holes got smaller and scarcer across the whole category.

German and French producers answered by adding ground hay flower powder to the milk, which restores the nuclei and the holes with them.
The Swiss refused it for years under their own protected rules, and the argument went to court. The Federal Administrative Court concluded the powder was the only workable solution, so Swiss makers may now use it too.
The powder itself is not an industrial additive in the way the word suggests. The stuff is ground organic hay flowers, which is to say the same material that used to fall into the bucket by accident.
That did not settle the argument in Switzerland. The federal agriculture office resisted permitting it precisely because it feared the industrialisation of a protected product, and lost.
The tension is worth naming, because it is unusual. A traditional cheese ended up needing a deliberate addition to keep looking the way it did when nothing was added at all.
The practical upshot for a shopper is that big holes are no longer proof of anything much. They tell you about nucleation, not about quality or origin.
How Is It Different From Swiss Emmentaler?
Both cheeses are protected, both are made from raw milk, and both come out of the same alpine tradition, so the honest answer is that they differ less than the packaging suggests and more than the shared name does.
The clearest separations are written into the two specifications rather than tasted.

On the plate the German cheese usually reads milder and a little sweeter, with the spice arriving late, where the Swiss version at the older grades carries more savoury depth and a longer finish.
Neither is a substitute for supermarket block Emmental, which is pasteurised, young, and built for slicing rather than for keeping.
Price separates them from that block more sharply than from each other. A protected wheel of either kind costs several times what the industrial version does, and most of that difference is the months of ageing rather than the milk.
The two are closer than the packaging suggests. Buy on the protected name and the hay-milk specification rather than on an assumed national difference.
What Does It Taste Like?

Anyone whose reference point is a supermarket slice will find this a good deal more assertive than expected, and the assertive part arrives last. The cheese runs nutty and mild at first, with a spicy, almost peppery finish that the fodder gets the credit for.
The paste is pale ivory to light straw, firm but supple, and it should bend a little before it breaks.
A squeaky, rubbery texture is the sign of a young industrial cheese rather than this one.
The natural rind is dry and tan and is not eaten. Cut it away with any hardened paste directly beneath it.
Older wheels pick up small crunchy crystals and a sharper edge, in the same way any long-aged hard cheese does.
The generic style is in every supermarket at a lower price, and the sharper contrast is against a Swiss wheel without eyes, which trades the sweetness for savoury depth.
The Jura wheel is where to go if you want alpine depth without the large eyes at all.
How Do You Cook With It?

Wheels this size only get made if there is somewhere for all of it to go, and cooking is where most of an Emmentaler wheel ends up. It melts cleanly and stretches without going oily, which is the practical reason the style spread at all.
Grated into a fondue it does the stretching work while a sharper alpine cheese supplies the flavour.
Locally it goes into Kasspatzen, the Allgau's own cheese spaetzle, where it is doing exactly that job.
The other regional dish is Allgauer Kasesuppe, in which the cheese is melted down into cream and stock. That only works with a cheese that will not split, which is why the local soup uses the local cheese.
Grate it rather than slicing it for anything cooked, because a thick slice will melt unevenly around its holes.

What Can You Use Instead?
Every substitute here is a trade, and the useful question is which half of the specification you were paying for.
For the raw milk and the long warm ripening, a Swiss Emmentaler AOP is the direct equivalent and easier to find outside Germany.
For the melt alone, an ordinary Swiss-style block will do the job in a sauce at a fraction of the price, though it gives you none of the hay milk rule that almost no other cheese at this scale enforces.
The milk is raw even though the cheese is hard and long-aged, so raw-milk cheese guidance is worth checking rather than assuming age settles it.
