It is also a pressed blue, which is unusual enough to explain almost everything about how it looks and eats.

Who Actually Makes It?
Two businesses, doing two different jobs, and the split is deliberate rather than a supply-chain accident.
The cheese is made at Consider Bardwell Farm at West Pawlet in Vermont, from raw cow's milk, in the farm's own creamery.
Roughly three weeks later it travels to New York, where Murray's takes over the ageing in its caves under the city.
The idea began as a collaboration between the two several years before the cheese reached a counter, which is why it exists at all rather than being a farm cheese that happened to find an affineur.
That distinction matters more than it sounds. Most cheeses sold as cave aged were designed by the farm and then handed over; this one was designed jointly, with the ageing in mind from the start.
Why Is the Blue in Patches?

Because it is a pressed cheese, which almost no other blue is.
A conventional blue is barely pressed at all. The curd is ladled in and left loose so that air can move through the gaps between the pieces, and the mould grows into that open structure everywhere at once.
Pressing does the opposite. It squeezes the curd into a continuous mass and closes most of those routes, so the paste comes out dense and sparingly eyed.
The mould can then only work where oxygen actually reaches, which means it grows in patches and thin seams rather than spreading through the whole wheel.
That is why a cut face looks so different from a Roquefort or an English blue. The blue is a set of pockets in a solid cheese rather than a network running through a crumbly one.

It also changes the eating. A dense pressed paste carries less salt to the tongue at once, which is a large part of why this reads as a mild blue.
Pressing is worth understanding because it is the step almost every other blue leaves out on purpose.
A conventional blue is ladled gently and left to knit loosely, so the curd pieces never fully close and the gaps between them become the channels the mould travels along.
Press that same curd and you close most of those gaps, which leaves the mould only the spaces that survived rather than a network running through the wheel.
So the patchy veining is not a fault in the piercing or an uneven batch. It is the direct visible result of a decision taken hours after the milk was set.

Why Is It Aged in a City?

Affinage is a distinct trade from cheesemaking, and treating it that way is normal in Europe and rare in the United States.
A farm creamery is built to turn milk into cheese on a schedule set by the herd. A maturing cave is built to hold humidity and temperature steady for months and to have someone turning and brushing wheels every week.
Splitting the two means each side does the part it is equipped for, and it means the finished character is partly the affineur's work rather than entirely the farm's.
The practical consequence for a buyer is unusual: because Murray's finishes it, Murray's sells it, and the cheese is effectively available from one place.
An affineur is doing more than storage. The cheese arrives young and the decisions about humidity, turning, brushing and when to release it are made downstream of the dairy.
Splitting the job that way lets a small farm make cheese without also running a maturing programme, which is the expensive half.
How Mild Is It, Really?
Milder than its appearance suggests, and more savoury than sharp.
The first notes are tangy and nutty, with hay and a faint barnyard edge that comes from raw milk and a natural rind rather than from the blue.
Underneath there is a chocolatey depth and a distinct minerality, and a peppery, herbaceous kick where the veining is concentrated.

The paste is dense and buttery, so it slices rather than crumbles, which is again the pressing showing up on the plate.
Anyone who finds the classic French blue or Gorgonzola too salty should start here. The kicks of blue are there, but they arrive in pockets rather than in every bite.
The natural rind is worth keeping on a slice. It carries most of the hay and barnyard character, and trimming it leaves a noticeably plainer cheese.
How Should You Use It?

The dense paste makes it more useful in a kitchen than most blues, because it holds its shape under heat instead of collapsing.
Chunks softened over roasted roots or a steak stay recognisable rather than turning to sauce, and the mildness means it seasons a dish rather than taking it over.
On a board it needs less protection than a sharp blue. Something sweet is welcome but not compulsory.
Holding its shape under heat is the property worth building a dish around, because most blues turn to liquid and salt the moment they meet a pan.
Cut it in slabs onto a steak at the end of the rest, or into a warm salad, and it will soften at the edges while the middle stays.
Where it is less useful is a sauce. A pressed paste resists dissolving, so a blue built to hold together is the wrong choice when you actually want it to disappear.

What Can You Use Instead?
The awkwardness here is that the two things making this cheese distinctive pull in opposite directions when you go looking for a replacement.
For the mildness, a young creamy blue will get you there, though it will be softer and will not slice the same way.
For the density and the sliceability, a firm pressed blue is what you want, and those are genuinely uncommon outside a few Spanish and Italian examples.
Do not reach for a soft Italian blue expecting similar behaviour in a pan. It will melt out where this one would hold.
It is a raw-milk blue, which means two separate cautions apply rather than one.
For a pressed blue with more force behind it, the protected Midlands one is the obvious step up, and the Italian one goes the opposite way into softness.
Among American blues, the Iowa one is the long-established reference point and is considerably sharper than this.
